Problem: LWW Athens Entourage users were sending mail with Greek characters but the recipients got a line of ????? instead of the characters.
Cause: By default Entourage uses the character set that the machine was built in, in this case, US English, and there is no way to force it to use another by default.
Work-around 1: Users can simply select Format/Character set/UTF-8 when they are composing a new mail message. This will allow them to use Greek and other non-latin characters.
Work-around 2: Create a default signature with a Unicode character in it. This will force all mail to be sent as Unicode and the Greek character set will display properly for the recipient.
Go to Tools/Signature to create or modify an existing signature
Add the € symbol to the signature (the € works best)
Reduce the font size to as small as possible (8pt)
Highlight the € and change the font color to white
Save the signature
Under Accounts Settings/Options make the default signature the one you modified with the € symbol
This will force all e-mails to use UTF-8 (the users will get a warning that they can disable)
